Place the apricots cut side up in a single layer in an ovenproof dish.
Place the remaining ingredients including the vanilla seeds and pod in a small pan. Bring to the boil, stirring then boil for 1 min. Pour the hot syrup over the peaches.
Cover the dish with foil and bake for 25mins or until the peaches are tender.
Leave to cool. Serve with ice cream.
