Half tomatoes, quarter mushrooms, cut asparagus and spring onions in smaller pieces. Cut halloumi into cubes.

Heat oil in heavy frying pan.

Fry the veg and cheese, turning occasionally.

Add salt, pepper, thyme, mushroom ketchup and single cream. Stir.

Cook for a few minutes until cream has thickened a bit.

  • 1 Tbsp olive oil
  • Half tsp salt
  • Pinch Pepper
  • Half tsp dried thyme
  • 2 Tbsp Single cream
  • Dash Mushroom ketchup
