Hi i‘m Lucy, a busy mum to 2 young children. I am a passionate vegan, but have a sweet tooth. I am hoping to destroy the stereotype that surrounds veganism with some of my yummy dairy free, but healthy treats and meals. I hope you enjoy my recipies.

Place the flour, sugar, water, cocoa and oil in a mug and stir until it looks like a yummy chocolate sauce.

Microwave for 60-90 seconds. Microwave time varies with different microwaves. The brownie will be done when, if you push a spoon in to it, about 3-4 mm of the top is still gooey and sticky, but the rest feels like cake.

Stick a few dollops of your favourite dairy free ice cream on top and enjoy the vegan loveliness :)

To make this more presentable, you can always scoop it out in to a bowl, as shown in the picture.
