Rinse the rice under cold running water then cook it according to the packet instructions.
In a large frying pan, place all the spices and a splash of coconut milk. Place over a medium heat until the aroma from the spices is released.
Peel and slice the bananas diagonally then add to the pan along with half the remaining coconut milk. Simmer until the banana is soft, adding more coconut milk while simmering.
Finally, add the sultanas and serve with the boiled rice.
