Prehat the oven to Gas Mark 4, 180°F.
Trim the beans and wash all vegetables (excluding the chilli). Slice the yellow pepper into thin strips. Heat the oil in a wok or frying pan until its starting to smoke and pan fry the vegetables on a high heat for 2-3 minutes stirring them continuously.
Finely chop the red chilli pepper into tiny pieces. Mix the salt, garam massala, grated coconut and chilli together and mix into the coconut milk. Pour the mixture into the pan and simmer on a low heat for 15-20 minutes.
Warm the naan breads in the oven 4 minutes before serving time. Once warm slice the naan breads and serve filled with vegetable Balti mixture.
You can substitute any of the above vegetables with vegetables of your choice. If adding root vegetables and potatoes, soften them in boiling water for 10 minutes before pan frying them.
