I was lucky to be able to trial tesco fresh veg with The Orchard Program and used them in this recipe

Scrub pots and slice thickly and boil.Chop all ingredients, peel aubergine before chopping .In large pan put oil and add chop veg and chopped garlic leave to sweat down.make cheese sauce,melt butter stir in flour and cook for 1 min, take off heat and whisk in milk put back on low heat and stir in 50g cheese keep stirring til thickens put to one side.take pots off heat when just cooked. Use lasagna dish, put slices of potato on bottom then veg mixture then cheese sauce then all once more then top with grated 25g cheese .Pop in heated oven ,150 electric /gas mark 4 , for 1 hour ....enjoy

  • 2tablespoon olive oil
  • 2 cloves garlic
