Can added spice to make it even nicer
Cook beetroot and 1 large onion with juice of lemon separately. Fry onion put in all the rest of the vegetables chopped in to small pieces. Pepper and salt to taste and herbs. Put the brown rice and water to cover and cook for 30 minutes.
use any vegetable you have cook colourful vegetables. Even use raw vegetables and salads mixed withe rice after cooked.
