Pour 5 cups of hot water in to a pan, add the stock cubes and bring to the boil
Peel and chop all of your veg in to small bite size chunks. (Chop the onion first and put it in to your pan and boil with stock)
Once you have chopped all your veg, add it to the pan of stock along with the broth mix and give it a good stir.
Add a sprinkle of salt and pepper for some extra flavour and leave to cook on a medium heat for 40 minutes.
Once the vegetables are soft and mushy, turn off the heat and blend the vegetables in to a smooth mix
Serve up and enjoy with a crusty loaf or let it cool and freeze it for another day!!!!
add extra water to the pan when blending if you want a thinner soup
