Vegetable Soup recipe

This recipe happened by accident and has become a quick and easy family favourite. It is often adapted depending upon what vegetables are in the fridge!

Peel and chop the carrots.

Next chop the peppers, celery and onion.

Put all ingredients, including tinned tomatoes, in a heavy based saucepan.

Cover completely with water, add the stock cube and bring to the boil.

Simmer for approximately 20 minutes, stirring occasionally until vegetables are soft.

Allow to cool slightly then puree with a handheld mixer.

Serve with crusty bread and a sprinkle of grated cheese. Add a twist of freshly ground black pepper and a pinch of salt (to taste).

If you like a thicker soup add the potatoes. This soup is also tasty with homemade croutons, toast 2 slices of bread then slice into small squares. Place on top of soup, then sprinkle with cheese.
