Cut the feta cheese into thick slices of 1 cm. Cut the tomatoes into wedges discarding the seeds. Cut peppers in half, discard the seeds and cut into strips. Peel and crush the garlic.
Cut 8 25cm x 25cm squares of aluminium foil to make 4 double thickness parcels. Brush with olive oil and spread evenly with the crushed garlic. Layer the feta cubes and tomato wedges alternately then sprinkle with the mixed herbs.
Season and cover each of the four packages with the pepper strips, topping each parcel with a teaspoon of pine nuts. Preheat the grill for 8 minutes, seal each parcel securely and place under the hot grill for 10 minutes.
