Vegetarian Spinach and Cheese Lasagna recipe

Preheat a fan oven to 180C or normal to 200C Chop the onion, crush/finely chop the garlic and get half the juice of a lemon. (put uncombined, to one side)

Make Cheese Sauce by combining the flour, paprika and 2mugs of cheese (about 1pint) together

Then mix the milk and butter in with the cheese mixture on a low heat. Keep stirring to avoid lumps. Once thick, take of the heat and put to one side.

Mix together 1/2 mug of cheese with the cottage cheese

Fry the onions and garlic until soft. Then add the spinach and fry until it has wilted.

Add lemon juice and season the onion mix to taste

Put cheese sauce in the bottom of a casserole dish. Then place a layer of lasagna sheets. Then place a layer of the onion mix, then add lasagna sheets. Keep going until you have enough of the cheese sauce to finely coat the top of the dish. Add the rest of the cheese.

Place in oven for 25mins until cheese is kind of browned.

You can also make half the cheese sauce and add Tesco's Marscepone tomato sauce for a less cheesy dish! Make sure to cover the top layer of lasagna sheets with something. Whenever I put just cheese on top they go too crispy, so I always put some sauce on the top layer too. You can serve with garlic bread (this would make the recipe more for 5 people) Currently this recipe is suitable for 3 people with very big appetites or 4 people with average appetites.
