Slice 3 carrots and microwave for about 5 minutes until soft. Chop a largish red onion and gently fry until soft. Add carrots, a 300g bag of Quorn mince and a 400g tin of chopped tomatoes. Stir well, cover and simmer for about 10/15 minutes. Bring a large pan of lightly salted water to the boil. Add enough pasta for 3 people and simmer for suggested cooking time. When ready, strain and stir in the Quorn mixture. Grated cheese can be sprinkled on top if liked.
If the Quorn mixture is a bit sticky then add a little water and stir. A drop of oil added to the pasta water will stop it from sticking.
