Put all the chopped vegetables into a pan and cover with the tinned beans, tomatoes and the vegetable stock. Leave to simmer for approx 30 mins until the vegetables have cooked. Remember to stir often. Add more vegetable stock if needed.
Puree the sauce until all the lumps have gone, add tomato puree to your own taste. Pour the sauce over cooked mince and serve with spagetti for a tasty and healty bolognase sauce.
Any leftover sauce can be frozen for another meal. Plus you can easily turn this meal into chilli by adding chilli powder and kidney beans and serving with rice or over a jacket potato.
