This is an adaptation of a french recipe without all the fatty ingredients> I always make double as the chickens seems to be good on the second day as the sauce has been infused
gently fry onion, peppers and garlic until soft, add chicken and fry on bothsides until sealed, add everything else, mix thoroughly and gently cook on hob for about 30-45 mins. If liked stir in a handful of washed spinach just before serving. Serve with rice or new potatoes and green veg- delicious, low fat and lovely!!!
This easy sauce can be used for fish or pasta, very low in fat, high in nutrition and very enjoyable. If liked different vegetables can be used eg.cougette,squash etc
