Chilli, lime juice, garlic and ginger give this filled baguette a real kick – great to keep you going after lunch! This recipe is a mouthwatering leftovers idea from our Scandinavian-style smoked gammon with parsley sauce dish.
Please note that 125g (4oz) of gammon is not included in the shop ingredients list as this is a leftover, so you will need to enter the product in your shopping basket if making this recipe from scratch.
- In a bowl stir together the rice vinegar, sugar, lime juice, ginger, garlic and chilli. Toss with the spring onion, carrot and cucumber.
- Slice the baguette in half lengthways and fill with the little gem leaves and gammon. Spoon over the carrot mixture and scatter over the coriander leaves if using. Cut into 2 to serve.
