I needed a sweet-tooth recipe whilst on a reduced fat diet, and came up with this recipe that uses no butter or oil - the moistness comes from soaking the fruit in tea and there‘s no guilt in having a slice with a cuppa!
Put the mixed dried fruit in a bowl, cover with the strong black tea and allow to soak for 30 minutes or until it has cooled down.
Mix in the granulated sugar and self raising flour, then fold in the chopped banana.
Pour the mixture into a greaseproof paper lined loaf tin and bake at 160C/140C fan or Gas No.3 for 1 hour or until a skewer or knife comes out clean when inserted.
Keep in an airtight tin or slice and freeze individual slices.
Add a teaspoon or two of mixed spice or ginger for a Winter/Christmas teabread, and add chopped nuts to the mixture or top it with nuts after pouring the mixture into the loaf tin.
