Preheat the oven to 200°C.
Scatter all prepared vegetables, except the spinach onto a roasting tin. Drizzle with olive oil, salt and pepper.
Lay the chicken on top of vegetables and place in the oven for 20 minutes.
To serve, divide spinach between 2 plates scatter the chicken and vegetables over the spinach and drizzle with balsamic vinegar.
