Boil new potatoes for about 15 mins until softened.
Drizzle cooking oil in a large frying pan. Add the chopped red onion and cook for a few minutes, when softened and brown remove from pan and put to one side. Add the chorizo sausages and fry on a medium heat to brown. When the sausages are nearly done, return the onions and potatoes to the pan mix and heat through.
Place rocket in a couple of bowls. Spoon on the potato, onion, chorizo mixture and drizzle the balsamic vinegar over the salad to serve.
