Warm jersey potato and pepper salad hero

Heat the oven to 220°C, 200°C fan, Gas 7.

Place the potatoes in a roasting tin with the oil, garlic, vegetables and lemon. Roast for 30-40 minutes, stirring once.

Whisk together the dressing ingredients and squeeze in the juice from the lemons. Pour over the salad and serve warm.

  • 2 clove(s) garlic, whole
  • 1 red onion, peeled and cut into eighths
  • 1 red pepper, de-seeded and quartered
  • 1 yellow pepper, de-seeded and quartered
  • 1 lemon, quartered
  • For the dressing

  • 1 tbsp olive oil
  • 1tsp balsamic vinegar
  • 1tsp wholegrain mustard
