I first discovered this recipe whilst on holiday in Scotland. We were camping and our tent had leaked, everything was soaked and we had all come down with bad colds. I don't eat out due to multiple food intolerances, and we were desperate to try a local recipe that would warm us up! I found a version of this recipe in a local gift shop and memorised it, before going back to our soggy tent and cooking it over a camping stove. Despite discovering this dish in miserable circumstances, it has since become a family favourite and always makes us chuckle to think back to our camping disaster. I have adapted this recipe to make it more peppery and the knorr stock cube adds a robust, chickeny flavour. It's a great winter warmer! I hope you enjoy!

Add the Shredded roast chicken, sliced leek, and diced onion to a large pan.

Add in the Bay leaves, Thyme, Knorr chicken stock pot, cracked black pepper, olive oil, prunes and boiling water.

Simmer for 45 minutes on a medium heat.

Add the white rice, and simmer for a further 15 minutes.

Season with salt and pepper and serve with bread rolls.

  • 2 Knorr Chicken Stock Pot
  • 3 Leeks, sliced
  • 2 Medium Onions, Diced
  • 8 Bay leaves
  • 225g dried prunes
  • 2 Tablespoons White Rice
  • 2 Tablespoons Cracked Black Pepper
  • 3 Pints boiling water
  • 2 Tablespoons extra-virgin olive oil
  • 1 Tablespoon Dried thyme
