Cut the sausages into meatball size pieces and fry in a large pan until golden all over. Add the garlic and oregano and fry for a couple of minutes.
Add the tomatoes and beef stock and the pepper and mushrooms and simmer for 15 - 20 minutes. Thicken the sauce with some cornflour if needed.
Serve with a mustard mash or with pasta.
