For a wonderfully light soup that's full of goodness, try this refreshing watercress and flaked salmon recipe. It's packed with flavour and quick and simple to prepare.
Sauté onion gently in the butter for 8 minutes.
Roughly chop the watercress, add to onion with potato and stock. Bring to the boil and simmer for 6 minutes. Blend until smooth.
Heat a pan of water and poach the salmon fillet for 6 minutes. Remove and when able to handle, flake the salmon into the soup and serve, topped with an optional tsp of crème fraîche.
