Place in a large bowl the flour, salt and baking powder. Mix together. Make a well in the centre of the flour and add the egg and almost all the milk. Mix together in the bowl the egg and milk, then incorporate the flour and remaining milk. Beat well until thick, lump free and creamy.
Heat a large nonstick frying pan or griddle plate. Very lightly brush with oil and then carefully wipe almost all off with kitchen paper. Place large spoonfuls of the mixture in the pan and cook until bubbles appear. Turn over with a spatula and cook the other side for about a minute. Keep warm and repeat with the remaining mixture.
Meanwhile place the bacon under a preheated grill and cook until crispy and golden. Mix together the thyme and honey and heat through in the microwave oven for about 30 seconds.
Serve a stack of pancakes, topped with bacon and drizzled with honey and thyme.
