Wensley Cake recipe

It is a Yorkshire tradition to eat cheese with fruit cake usually served side by side, but this recipe combines the two!

Preheat oven to Gas 5 (190 C/375 F)

Lightly grease an 8“ round tin and line with greaseproof paper.

In a large bowl, beat butter and sugar till fluffy.

Break eggs in a jug and whisk lightly then add to the mixture a little at a time, beating until smooth.

Add flour, ginger and spice. Stir well.

Add dried fruit and grated apple and combine evenly.

Spoon half the mixutre into the tin and cover with sliced Wensleydale. Top with the remaining cake mixture.

Bake in the centre of oven for 25 minutes then reduce oven to Gas 3 (160 C/325 F) for an additional 1 3/4 hours or until a skewer comes out clean.

Allow to cool in the tin before turning out and store in an airtight container.

Best eaten within 12-15 days.
