Wash the basil thoroughly
Place the pine nuts onto a lightly oiled baking tray and bake in the oven until they start to change colour to golden.
Place the basil, pine nuts, cloves of garlic, contents of the Parmesano and a good sized splash of olive oil into a blender and blend until smooth or a texture that you prefer
Add some oil and salt into a saucepan of water and bring to the boil, add the wheat free pasta and cook until al dente.
When the pasta is cooked, drain, then return to the pan and mix in the pesto.
Can be served with a crunchy red onion and pepper salad
This is a super-simple recipe that can be made in a rush for anyone with wheat or dairy allergies. It is such a lovely recipe and no one will know that it is wheat and dairy free!
