I love baking for my friends and family but when I gave up wheat for 40 days I really struggled with finding delicious treats to bake. On a day when I had a real craving for an apple crumble I decided to make an almond topping and came up with the idea of a bakewell topping instead or traditional crumble. Hey presto - wheat free apple bakewell dessert!
Preheat the oven to gas mark 4/180C.
Peel, core and finely slice the apples. Place into a bowl and sprinkle over the cinnamon. Mix well until all of the apples are coated.
In a separate bowl whisk together the butter and sugar until light and fluffy. Beat in the two eggs until well combined. Finally fold in the ground almonds.
Place the sliced apple in the bottom of 4 deep ramekins and top them off with the almond mixture.
Cook for 20-25 minutes or until the almond topping is golden brown and cooked through.
Serve with some lightly whipped vanilla cream.
As an alternative you can omit the cinnamon and add 4 or 5 blackberries to each ramekin. Adding a few small knobs of butter to the apples before topping with the almond mixture will add a little more luxury to the dish, as will topping the almond mixture with some toasted flaked almonds.
