Wheat Free Bread & Butter Pudding recipe

I'm a self emplyed craft designer with 3 grown up children and 5 grandchildren.

Butter 8 slices of Tesco Free From white bread and cut into triangles. This is a great recipe to use up old bread as if the bread is a bit on the dry side it will soak up the eggy mixture more easily.

Grease a baking dish and lay a layer of bread triangles over the base, butter side up.

prinkle with sugar and dust with cinnamon powder. Add dried fruit, I like to use selection of plump raisins or sultanas and currants.

Top with another layer of bread, spices and dried fruit and finish with a layer of bread.

Whisk 2 large free range eggs with 350 ml milk. Adding 50ml double cream at this stage will make this a luxury dessert!!

Pour the milk and egg mixture all over the dish. Cover and set to one side to allow the bread to soak up the eggy milky mixture

Before baking sprinkle the top with brown sugar and dust with cinnamon.

Bake in a hot oven for 40 to 45 mins till the top is brown and the egg mixture has set. Serve hot

This recipe can also be adapted to make a savory supper recipe. Use a Wheat Free Seeded batch and replace the sugar and cinnamon with cheese and softenened onion and serve with a green salad for a tasty supper.

Adding 50ml double cream with the milk at step 5 will turn this a luxury dessert!!
