pre heat oven to 180`c grease and line a 20cm round cake tin

mix vitalite and sugar together until creamy

seperate eggs and beat yolks in to mixture add lemon juice.

add the dry ingredients, flour, baking powder,salt and spices

in another bowl whisk egg whites until stiff and then fold into mixture

add grated carrot, stir until everything is well mixed

spoon in to cake tin

cook in oven until golden and firm to touch them place on a rack to cool fully
