White chocolate and walnut cookies recipe

I have been trying to find the perfect cookie recipe for a while and after trying several and adding my own little bits I am finally happy. I used to stick with fudge chunks and chocolate but after trying white chocolate and walnut together decided to give it a go in the cookie recipe. I love it and I'm not even a big fan of nuts.

Heat the oven to 180-190C. Line a baking sheet with greaseproof paper. Beat the butter, sugars and egg until smooth.

Break up the walnuts and chocolate into chunks and stir into the mix with the flour and vanilla essence.

Make into rough blobs and place on the baking sheet. You can make them whatever size you want to. I usually have blobs approximately 3 cm wide to make big cookies.

Bake for 12-15 mins until lightly golden, but still soft. Leave to cool so they firm up a little.

You can freeze the dough- just give them a little longer in the oven. Make sure the cookies are well spaced on the baking sheet as they will grow quite a lot in size. You can also substitute the chocolate and nuts for whatever you like. Fudge chunks and chocolate is really tasty too!
