This is a delicious and very healthy meal. It can be done very quickly but the beautiful flavour of the lightly smoked salmon combined with the creamy, nutty mash and the crunchy sweetness of the sugar snaps guarantees to impress the lucky lady/man!

Boil a large pan of water, heat a frying pan with two table spoons of olive oil and Pre-heat the grill to maximum setting.

Put the two fillets of salmon on foil in a grill pan - cook for ten minutes or until slightly crispy on top and cooked through.

Meanwhile fry the finely chopped shallots in the heated frying pan until golden brown and boil the butternut squash and sweet potato (already pre-cut up) until soft enough to mash. Drain the water from the sweet potato/butternut squash pan into a separate pan and use to steam the sugar snaps for five minutes max, then mix the shallots in with squash/potato and mash until creamy consitency (can add knob of butter to taste if wish).

In centre of two plates place generous serving of the mash then place the grilled salmon on top , finish dish with the sugar snaps and serve piping hot for a quick, healthy and delicious meal!

Tips: It's best to keep an eye on the grilling of the salmon so it doesn't burn.

As ever with cooking timing is the name of the game, try not to over-cook the veg or finish one element too soon so it sits and goes cold.
