Winter citrus fruits with mint dressing recipe

Drain the grapefruit segments reserving approximately 100ml of the juice. Pour the juice into a jug then add the grated ginger, honey and chopped mint. Mix well. 

Place the grapefruit and orange segments in a bowl, pour over the dressing, then divide between four bowls to serve.
