Brighten up winter mornings with this vibrant, refreshing citrus fruit salad. A quick and easy breakfast, ginger and mint add extra flavour to the juicy grapefruit and orange.

  1. Drain the grapefruit segments reserving approximately 100ml of the juice. Pour the juice into a jug then add the grated ginger, honey and chopped mint. Mix well. 
  2. Place the grapefruit and orange segments in a bowl, pour over the dressing, then divide between four bowls to serve.
