I wanted a low fat, healthy, tasty soup to aid weight loss. This soup is low in calories but very tasty.
Peel and chop all vegetables.
Saute onion and leek in 1 tablespoon oil or Fry Light if dieting, until softish
Add other vegetables and stir occasionally.
Dissolve stock cubes in boiling water and add to saucepan of vegetables.
Add lentils, barley and coconut milk powder and stir.
Bring to the boil, turn down, cover pan and simmer for approx 45 mins to one hour, or until soup is thickened and vegetables are soft. Season with salt and pepper to taste.
If using for lunch daily, store in fridge for up to 4 days
If using as main meal, stir in quorn pieces with vegetables.
