Preheat oven to Gas 6, 200°C, fan 180°C.
Cut all vegetables into chunks, throw into a roasting tin and drizzle with olive oil. Season with salt and pepper. Place tin in the oven and roast for 20-30 minutes..
Cook spaghetti according to packet instructions and drain. Add chopped tomatoes with the sugar (if using) to the pasta, then throw in the roasted vegetables and serve.
Tip: You may want to use garlic when roasting your vegetables
