Place the flour, butter and sugar in a bowl and rub together to make breadcrumbs. Add 2tbsp cold water and bring together into a ball. Chill for 10 minutes.

Heat the oven to 200ºC/180ºC fan/gas 6.

Roll the pastry out on a lightly floured board and cut out, using an 8cm (3in) round pastry cutter. Use to line 12 greased bun tins.

Place the cottage cheese, sugar, egg, lemon rind, raisins, peel and brandy in a bowl and mix together well. Spoon into the pastry cases and sprinkle with the nutmeg or allspice. Bake for 12-15 minutes until the pastry is golden and the filling is set.
