Preheat the oven to Gas 6, 200°C, fan 180°C.
Crumble the goats cheese into a large mixing bowl. Add the crushed garlic and mix.
Roughly chop three quarters of the basil and add to the cheese mixture.
Unroll the pastry on to a tray and score an edge 1cm in, taking care not to cut through the pastry.
Tip the goats cheese mixture on to the pastry and spread evenly inside the scored edge.
Wash and halve the tomatoes, then carefully cut each half into thin slices
Arrange the tomato slices in overlapping lines along the length of the tart. Start each line from opposite ends for a pleasing effect when cooked.
Season with salt and pepper and drizzle over a little olive oil.
Cut the tomatoes into thin slices
Place into the preheated oven and bake for 35 - 40 minutes.
Delicious hot or cold!
