I was bored one sunday and decided to make a cake for the family, chocolate is always a favourite. I make lots of cakes and biscuits so I had a basic chocolate cake reciepe already. I looked in my fridge to see what else I could add to the mixture, I had a large bag of maltersers and some mascarpone so decieded to add them. I had lots of fun making this cake and it‘s the family favourite now. And it keeps for a few days if you have any left. Don't forget to add a large spoonful of extra thick double cream on the side. Pre-heat oven 180. 2 x 18 cm tins, grease the base and sides. Whisk the eggs and sugar for a full 4 mins until they turn pale and treble in size.Add the flour, cocoa powder, almonds, baking powder, salt, buttermilk and melted butter to the bowl and mix to combine.Divide the mixture between the two prepared tins and place into the middle of a hot oven for 30 mins.Once cooked, leave to cool on a wire rack for at least 20 mins until cold.While the cake is cooling, make the icing: place the mascarpone and icing sugar in a bowl and mix together until no lumps.Put cake together, put thin layer of fosting in the middle and put some maltersers on top. Then add second cake on top, put more frosting on top and on the sides (a thicker layer) then add your maltersers all over the top.
You can put the cakes in the fridge to cool for quickness.
