Heat the olive oil in a frying pan.
Add the garlic and onions and cook gently until soft.
Halve the cherry toms and fry until soft and mushy.
Sprinkle over the balsamic vinegar and warm through.
Toast the bread and top with the mixture.
Lovely light lunch with a cup of tea.
