I have a husband who is obsessed with cakes and loves citrus flavours so I started making drizzle fairy cakes and then had to move to a larger version to keep him happy!
Pre heat the oven to180C/fan 160C/Gas 4.
Add the flour, sugar, lemon zests into a large bowl
Beat the eggs, butter and lemon juice into the bowl and mix until mixture is a creamy yellow.
Line a loaf tin (8 x 21cm) or any large tin with greaseproof paper and pour mixture in evenly.
Bake for 35-45 mins until a thin skewer inserted into the centre of the cake comes out clean.
While the cake is cooking, mix together the juice of the 2 lemons and the 75g caster sugar to make the drizzle.
Once cooked take the cake out and place on a cooling tray and gently drizzle the topping over the cake... for an icer finish add more sugar to the topping
Leave in the tin until completely cool, then remove and serve. Will keep in an airtight container for 3-4 days.
To make it more lemony increase the amount of lemons!
