Bakewell banana bread recipe

If you love banana bread, you'll want to try this fruity twist, inspired by the flavours of classic Bakewell tart. There are pops of tangy raspberries, as well as ground almonds, which keep the loaf lovely and moist. Alongside dates and banana, this recipe is packed with natural sweetness, which means it's a source of fibre and high in vitamin E. What more could you want from a sweet snack? See method
Ingredients
- 1 tsp vegetable oil, for greasing
- 2 very ripe bananas, mashed
- 1 large egg
- 150g 0% fat Greek-style yogurt
- 1 tsp vanilla extract
- 100g ground almonds
- 125g plain four
- 1 tsp baking powder
- ½ tsp bicarbonate of soda
- 100g dates, finely chopped
- 100g raspberries
- 2 tbsp flaked almonds

Method
- Preheat the oven to gas 4, 180°C, fan 160°C. Grease and line a 900g loaf tin with baking paper.
- Whisk the mashed banana, egg, yogurt and vanilla in a bowl using an electric hand mixer for 2 mins until smooth. In a separate bowl, combine the ground almonds, plain four, baking powder and bicarbonate of soda. Pour the dry ingredients into the wet ingredients, then mix until just combined, but don’t over mix. Gently fold through the dates and raspberries. Pour the mix into the prepared tin and scatter evenly with the faked almonds.
- Bake for 45-55 mins until risen and golden and a skewer comes out clean. Cover with foil if browning too quickly. Leave to cool in the tin for 10 mins, then transfer to a rack to cool. Once cool, wrap well in foil. Store in an airtight container or resealable bag for up to 2 days in a cool, dark place or 1 week in the fridge.
