Ingredients

  • 8 bread slices
  • 100g (3 ½ oz) mixed vegetables of your choice (carrot, cauliflower florets, peas, potato) – parboiled
  • 1 onion, finely chopped
  • ½tsp turmeric powder
  • ½tsp red chilli powder
  • 1 green chilli, slivered into long pieces
  • 1tsp cumin seeds
  • 2tbsp vegetable oil
  • 1tbsp fresh coriander leaves, finely chopped
  • 1tbsp fresh lemon juice
  • salt
If you haven't got any white bread, try using brown instead

Method

  1. Cut the bread into 2.5cm (1in) square pieces. Heat the oil in a flat bottomed pan and add the cumin seeds. Once they start turning brown, add the chopped onions and sauté until golden brown.
  2. Toss in the green chilli pieces, parboiled vegetables and add the turmeric powder. Now add the cut bread pieces and sprinkle the chilli powder and salt evenly.
  3. Toss the contents in the pan and sprinkle little water and allow it to cook on medium flame for about 5-6 minutes, until the bread pieces become golden and crusty. Put off the flame, add the fresh lemon juice and coriander leaves. Serve hot.
