This isn’t your average cheese and tomatoes on toast. Sourdough toast is topped with lemony cream cheese followed by lightly charred, garlicky buttery tomatoes. Finished with a grating of Parmesan, it makes a lovely lunch. See method

Ingredients

  • 1 tbsp olive oil, plus 1 tsp
  • 2 slices Tesco Finest white sourdough loaf
  • 220g pack Tesco Finest sugarbelle tomatoes
  • 2 tbsp butter
  • 2 garlic cloves, finely chopped
  • pinch crushed chillies
  • 5g fresh chives, finely chopped
  • 100g soft cheese
  • 1 lemon, juiced
  • 10g Tesco Finest Parmigiano Reggiano, finely grated

Method

  1. Heat 1 tsp oil in a frying pan until hot, then add the sourdough slices and toast until golden and crisp on both sides. Remove from the pan.
  2. Add the remaining 1 tbsp oil to the same pan, followed by the tomatoes, and fry until they’re lightly charred, slightly tossing as they cook. Add the butter, garlic and crushed chillies, and press some of the tomatoes to allow their juices to create a pan sauce. Season to taste, then sprinkle over the chives.
  3. Meanwhile, combine the soft cheese and lemon juice in a small bowl, and season to taste. Add to a piping bag with a round nozzle.
  4. Pipe the soft cheese onto the sourdough slices (if you don’t have a piping bag, you can just spread it on), top with the tomatoes and finish with a generous grating of Parmigiano Reggiano.
