This speedy seasonal dessert is made with blueberries, cream and lemon zest, and is guaranteed to add a sweet note to your barbecue or summer fiesta. See method

Heat the blueberries, sugar and lemon zest and juice in a saucepan until the sugar is dissolved and the blueberries are just beginning to soften but still keep their shape. Allow to cool completely.
When the fruit is cooled, beat the cream with the icing sugar until soft peaks form, then add half the blueberries and their juice and stir to give a ripple effect. Serve in glass dishes with the remaining blueberries on top.
