Snack healthy with these wonderfully crispy kale chips, you won't even notice the difference! They make the perfect snack on the go and are ideal for kid's lunchboxes.
Preheat the oven, gas 1, 140°C, fan 120°C.
Tear the kale into similar-sized pieces and toss together with the olive oil until well coated. Spread out over 2 baking trays, making sure the leaves aren’t touching each other. Cook for 15 minutes, then turn and cook for a further 15 minutes until crisp.
Remove from the oven and scatter with a little sea salt, if you like. Store in an airtight container for up to 3 days.
