  • 200g kale, thick stems removed
  • ½ tsp extra-virgin olive oil

  1. Preheat the oven, gas 1, 140°C, fan 120°C.
  2. Tear the kale into similar-sized pieces and toss together with the olive oil until well coated. Spread out over 2 baking trays, making sure the leaves aren’t touching each other. Cook for 15 mins, then turn and cook for a further 15 mins until crisp.
  3. Remove from the oven and scatter with a little sea salt, if you like. Store in an airtight container for up to 3 days.
