With creamy mozzarella and tangy tomatoes, this summer salad recipe is a dinner idea for two you'll want to make again and again. The mozzarella is marinated in pesto, and added to the tomato salad with basil and lemon for a new twist on a classic Caprese salad. See method

Ingredients

  • 150g pack mozzarella
  • 50g Tesco Finest basil pesto
  • 250g pack Tesco Finest mixed baby tomatoes, halved
  • 100g vine tomatoes
  • ½ tbsp extra-virgin olive oil
  • 10g fresh basil, leaves torn, plus extra to garnish
  • ½ tsp fennel seeds, crushed
  • ½ lemon, zested
  • 2 slices crusty bread, toasted, to serve

Method

  1. Put the mozzarella in a bowl with the pesto and set aside to marinate for 10 mins.
  2. Mix the tomatoes with the oil, basil, fennel seeds and lemon zest; season. Tear over the mozzarella, then top with the extra basil. Spoon over any pesto left in the bowl and serve with the toast.
