Purple broccoli with garlic crumbs recipe

In a small pan, heat together the olive oil and the butter. When melted, add the garlic and the breadcrumbs, mix well and cook over a low heat, stirring frequently, until the crumbs are crispy and golden. Season well.

While the crumbs are cooking, parboil the broccoli in a large pan of lightly salted boiling water for 5 minutes. Drain the broccoli thoroughly, arrange on a warmed serving dish and scatter with the garlic crumbs. Serve immediately.

TIP The garlic crumbs can be made the day before and simply heated through gently in a frying pan for a few minutes before serving.
