These beautiful strawberry shortcakes are made with just three ingredients and are quick and easy to make. They would look beautiful as part of an afternoon tea spread but are easy enough to make for an afternoon tea break too. See method
Ingredients
- 400g strawberries, hulled, 250g roughly chopped, 150g finely diced
- 150ml double cream
- 20 mini shortcake bites

Method
- Put the roughly chopped strawberries into a saucepan with 3 tbsp of water and bring to a simmer for 10 mins, stirring regularly. Use the back of the spoon to squidge the fruit and stir into a compote texture, then leave to cool.
- Whisk the double cream to soft peaks, then fold the strawberry purée through the cream and spoon into a piping bag with a star nozzle. Pipe a little cream on one side of 10 shortcake bites. Be careful not to over fill, as the cream will spill out.
- Add a few chopped strawberries on top and sandwich with another biscuit. Repeat. Serve with remaining chopped strawberries. Serve straight away.
