We’ve given carbonara a beansy makeover in this quick and easy recipe. Tender butter beans are coated in the same cheesy egg sauce and served with crispy bacon crumbs for a delicious twist on the Italian classic. See method

Ingredients

  • 100g Tesco Finest Alderwood smoked streaky bacon
  • 2 medium eggs, plus 1 egg yolk
  • 70g Parmigiano Reggiano, finely grated
  • 2 x 400g tins butter beans, plus 2 tbsp bean water
If you don't have these beans, you can use any tinned bean in water

Method

  1. In a frying pan over a high heat, fry the bacon until crisp, then transfer to a board and finely chop into crumbs. Leave the bacon fat in the pan.
  2. Mix the eggs and egg yolk and most of the Parmigiano Reggiano (reserving a little to serve) in a bowl, then slowly drizzle in half the saved bacon fat and mix together. Season with lots of black pepper and a little salt.
  3. Put the frying pan back over a medium heat and cook the beans until warmed through.
  4. Take the pan off the heat, then add the cheese-egg mixture and mix until silky and smooth, adding the bean water to thicken if needed.
  5. Serve in bowls with the bacon crumb sprinkled over the top and the remaining Parmigiano Reggiano cheese.
