Ingredients

  • 1 ripe medium pineapple, peeled, cored and finely sliced lengthways, or a 432g tin pineapple slices, drained
  • 4 tbsp clear honey
  • 1 lime, zested and juiced
  • 4 mint sprigs, leaves picked and finely shredded
If you don't have any limes, try a lemon instead

Method

  1. Arrange the pineapple on a plate or in an airtight container.
  2. In a bowl, mix the honey, lime juice and zest together, stir through the mint, then drizzle over the pineapple. Make up to a day ahead and keep, covered, in the fridge.
