Rich, fragrant and gently spiced, a good satay sauce is a hero ingredient in your fridge, just the ticket for pepping up meat, fish, veg and salads. We like it drizzled over steak or vegetable skewers, or try tossing it through noodles and shredded veggies for a quick and flavoursome meal. See method

Ingredients

  • 160ml tin coconut cream
  • 50g smooth peanut butter
  • 1 tbsp reduced-salt soy sauce

  • 1 tbsp fish sauce
  • ½ tsp ground cumin
  • 1½ tbsp dark brown soft sugar
  • 1 lime, juiced​
If you don't have any limes, try a lemon instead

Method

  1. Whisk together the coconut cream, peanut butter, soy sauce, fish sauce, ground cumin and dark brown soft sugar in a saucepan over a low heat. Cook, stirring continuously, until the sauce begins to thicken.
  2. Remove from the heat and add the lime juice. Serve warm or chilled.

Tip: Add chopped peanuts to the top for a little crunch, or a pinch of crushed chillies if you like it spicy.
