This versatile sweet and spicy peanut dressing can used as a dipping sauce, a drizzle over salads or even a nice marinade. It can liven up so many recipes! See method
Ingredients
- 3 tbsp reduced-salt soy sauce
- 3 tbsp crunchy peanut butter
- 1 lime, juiced
- 2 garlic cloves, finely chopped
- 1 tbsp rice wine vinegar
- 1 tsp maple syrup
- 2 tsp sweet chilli sauce
- 5g fresh coriander, finely chopped
- pinch of crushed chilli flakes
If you don't have any limes, try a lemon instead

Method
- Mix together the soy sauce, peanut butter, lime juice, chopped garlic cloves, rice wine vinegar, maple syrup or honey and sweet chilli sauce.
- Stir in 2 tbsp boiling water to loosen, then add the chopped coriander and crushed chilli flakes.
- Store in an airtight container in the fridge for up to 3 days.
